2 boneless, skinless chicken breasts

1 cup orzo pasta

4 cloves garlic, minced

1 cup chicken broth

1 cup heavy cream

1 cup spinach leaves, chopped

1/2 cup grated Parmesan cheese

2 tablespoons olive oil

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh parsley, chopped, for garnish

Instructions
 

Begin by seasoning the chicken breasts with salt, pepper, and Italian seasoning on both sides.

    In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and sear for about 5-6 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.

      In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Be careful not to burn it.

        Pour in the chicken broth and bring it to a simmer. Add the orzo pasta to the skillet and cook according to package instructions, usually about 8-10 minutes or until al dente.

          Once the orzo is cooked, lower the heat and stir in the heavy cream and grated Parmesan cheese. Mix until the sauce is creamy and well combined.

            Add the chopped spinach to the skillet and stir until it wilts into the creamy sauce.

              Slice the cooked chicken breasts and nestle them back into the skillet on top of the orzo. Allow everything to heat through for another minute.

                Taste and adjust seasoning with salt and pepper, if needed.

                  Remove from heat and let it sit for a few minutes before serving.
