1 lb sirloin steak, cut into bite-sized pieces

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh thyme leaves

1 teaspoon fresh parsley, chopped

Salt and pepper to taste

2 tablespoons heavy cream

2 pounds russet potatoes, peeled and cubed

½ cup milk

¼ cup sour cream

2 tablespoons olive oil

Optional: chopped chives for garnish

Prepare the Mashed Potatoes: In a large pot, add the cubed russet potatoes and cover them with water. Bring to a boil and cook until fork-tender, about 15-20 minutes. Drain the potatoes and return them to the pot.

    Mash Potatoes: Add milk, sour cream, and salt to the potatoes. Mash until smooth and creamy, adjusting seasoning to taste. Keep warm and set aside.

      Sear the Steak Bites: In a large skillet, heat 2 tablespoons of butter and olive oil over medium-high heat. Season the steak bites with salt and pepper.

        Cook Steak: Add the steak bites to the skillet and sear until browned and cooked to your preference, about 3-4 minutes for medium-rare. Remove the steak bites from the skillet and set aside.

          Make the Garlic Butter Sauce: In the same skillet, add the remaining 2 tablespoons of butter. Once melted, add the minced garlic and fresh thyme. Sauté for about 1 minute until fragrant.

            Finish the Sauce: Stir in the heavy cream and mix well, allowing it to simmer for about 2-3 minutes until slightly thickened. Add the cooked steak bites back into the skillet and coat them in the sauce.

              Serve: On a plate, serve a generous scoop of creamy mashed potatoes topped with the garlic butter steak bites. Drizzle any extra sauce over top and garnish with fresh parsley and optionally chopped chives.
