1 cup dried green or brown lentils, rinsed

1 tablespoon coconut oil

1 medium onion, diced

3 cloves garlic, minced

1-inch piece of ginger, grated

1 tablespoon curry powder

1 teaspoon ground turmeric

1 teaspoon cumin

1 can (14 oz) coconut milk

4 cups vegetable broth

1 cup diced tomatoes (fresh or canned)

1 cup diced carrots

1 red bell pepper, diced

Salt and pepper to taste

Fresh cilantro for garnish

Juice of 1 lime

Instructions
 

Heat the coconut oil in a large pot over medium heat. Add the diced onion and sauté until translucent for about 4-5 minutes.

    Stir in the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.

      Add the curry powder, turmeric, and cumin to the pot, stirring well to coat the onions. Toast the spices for about 1 minute.

        Incorporate the rinsed lentils, diced tomatoes, carrots, and bell pepper into the pot, mixing everything thoroughly.

          Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to low, cover the pot, and let it simmer for about 25-30 minutes, or until the lentils are tender.

            Once the lentils are cooked, stir in the coconut milk and cook for an additional 5 minutes to allow flavors to meld.

              Season the soup with salt, pepper, and lime juice to taste. Adjust the consistency with more broth or water if necessary.

                Remove from heat and serve hot, garnished with freshly chopped cilantro.
