1 lb boneless, skinless chicken breasts

4 cups chicken broth

1 can (15 oz) black beans, rinsed and drained

1 can (10 oz) diced tomatoes with green chilies

1 medium onion, diced

3 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon chili powder

1 cup corn (fresh or frozen)

1 cup heavy cream

1 cup shredded cheddar cheese

1 tablespoon olive oil

Salt and pepper to taste

Tortilla chips, for serving

Optional toppings: avocado, cilantro, lime wedges, sour cream

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until fragrant and translucent, about 3-4 minutes.

    Cut the chicken breasts into small bite-sized pieces and add them to the pot. Cook until they are no longer pink, about 6-7 minutes.

      Stir in the cumin, chili powder, salt, and pepper to season the chicken.

        Pour in the chicken broth, black beans, diced tomatoes with green chilies, and corn. Bring the soup to a simmer and let it cook for 15-20 minutes, allowing the flavors to meld.

          After simmering, use a fork to shred the chicken directly in the pot or remove the pieces, shred them, and return to the soup.

            Lower the heat and stir in the heavy cream, allowing it to warm through without boiling.

              Lastly, mix in the shredded cheddar cheese, stirring until melted and incorporated into the soup. Adjust seasoning with more salt and pepper if needed.

                Serve the soup hot, garnished with tortilla chips and any optional toppings you'd like, such as avocado slices, fresh cilantro, lime wedges, or a dollop of sour cream.
