2 boneless, skinless chicken breasts

1 cup heavy cream

1 cup chicken broth

1 cup fresh spinach, chopped

1 cup mushrooms, sliced

2 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon paprika

2 tablespoons olive oil

Salt and pepper to taste

Fresh parsley for garnish

Instructions
 

Start by seasoning the chicken breasts with salt, pepper, thyme, and paprika on both sides.

    In a large skillet, heat the olive oil over medium heat. Add the seasoned chicken breasts and cook for about 6-7 minutes on each side, or until fully cooked and golden brown.

      Once cooked, remove the chicken from the skillet and set aside on a plate to rest.

        In the same skillet, add the minced garlic and sliced mushrooms. Sauté for 3-4 minutes until mushrooms are tender.

          Pour in the chicken broth and bring to a simmer, scraping the bottom of the skillet to deglaze and incorporate all the flavors.

            Reduce the heat to low and stir in the heavy cream, allowing it to blend smoothly with the broth. Let it simmer for about 2-3 minutes until it thickens slightly.

              Add in the chopped spinach and cook for another 2 minutes until wilted.

                Slice the rested chicken and return it to the skillet, stirring gently to coat it with the creamy sauce.

                  Taste and adjust seasoning with salt and pepper as needed.

                    Serve warm, garnished with freshly chopped parsley.
