2 cups diced cooked ham

4 medium potatoes, peeled and cubed

1 cup carrots, diced

1 cup celery, diced

1 medium onion, chopped

3 cloves garlic, minced

4 cups chicken broth

1 cup heavy cream

2 cups shredded cheddar cheese

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, heat olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent.

    Add the minced garlic and continue to sauté for another minute, until fragrant.

      Stir in the diced carrots, celery, and cubed potatoes. Cook for an additional 5 minutes, stirring occasionally.

        Pour in the chicken broth and add the dried thyme, paprika, salt, and pepper. Bring the mixture to a boil.

          Reduce heat to low, cover, and let it simmer for about 20 minutes, or until the potatoes are tender.

            Once the vegetables are cooked, stir in the diced ham and heavy cream, mixing well.

              Gradually add the shredded cheddar cheese, stirring constantly until melted and the chowder is creamy.

                Taste and adjust seasoning with more salt and pepper if needed.

                  Remove from heat, and let it sit for a few minutes before serving.
