Fresh vs. Canned Corn: Which to Use? I often choose fresh corn for my creamed corn. It has a bright taste and sweet crunch. If fresh corn is not available, canned corn works well too. Just drain and rinse it before using. Both options yield tasty results, but fresh corn adds more texture.

Ingredients

4 cups fresh corn kernels (or 3 cans of corn, drained)

1 cup heavy cream

1/2 cup whole milk

2 tablespoons unsalted butter

2 tablespoons sugar

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon garlic powder

1/4 teaspoon smoked paprika

1/4 cup grated Parmesan cheese (optional)

Chopped fresh parsley for garnish

Instructions

Prepare the Corn: If using fresh corn, husk it and remove the kernels from the cobs using a sharp knife. If using canned corn, drain it and rinse under cold water.

Sauté Aromatics: In a large skillet or saucepan, melt the butter over medium heat. Add the corn kernels (either fresh or canned) and sauté for about 5 minutes until they begin to soften.

Add Liquids: Pour in the heavy cream and whole milk, stirring to combine. Bring the mixture to a gentle simmer.

Season the Mixture: Stir in the sugar, salt, black pepper, garlic powder, and smoked paprika. Cook for an additional 10 minutes, stirring occasionally, until the corn is tender and the mixture thickens slightly.

Blend for Creaminess: For a creamier texture, use an immersion blender to blend a portion of the corn mixture, leaving some whole kernels for texture. Alternatively, carefully transfer half of the corn mixture to a blender, blend until smooth, then return it to the skillet.

Finish with Cheese: If desired, stir in the grated Parmesan cheese until melted and creamy. Adjust seasoning according to taste.

Garnish and Serve: Remove from heat and let cool for a minute. Garnish with fresh parsley before serving.

                - Prep Time: 10 minutes | Total Time: 30 minutes | Servings: 6-8

Presentation Tips: Serve the creamy corn in a rustic bowl or small cast iron skillet for a charming presentation. Drizzle a little extra cream on top and sprinkle with additional cheese and parsley just before serving. Enjoy this delightful dish as a side that’s sure to please!
