500g fresh mushrooms (a mix of button, cremini, and shiitake), chopped

1 medium onion, diced

2 cloves garlic, minced

2 tablespoons olive oil

4 tablespoons unsalted butter

1/4 cup all-purpose flour

4 cups vegetable broth

1 cup heavy cream

1 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

A pinch of nutmeg

Instructions
 

In a large pot, heat the olive oil and 2 tablespoons of butter over medium heat. Once melted, add the diced onion and sauté until translucent, about 5 minutes.

    Stir in the minced garlic and cook for another minute until fragrant.

      Add the chopped mushrooms to the pot, cooking for about 8-10 minutes until they release their juices and begin to brown.

        Sprinkle the flour over the mushroom mixture, stirring well to coat, and cook for an additional 2 minutes to eliminate the raw flour taste.

          Gradually add the vegetable broth to the pot, stirring continuously to avoid lumps. Once combined, bring to a gentle simmer.

            Add the dried thyme, nutmeg, salt, and pepper. Simmer for about 15 minutes, allowing the flavors to meld.

              Reduce the heat to low and slowly stir in the heavy cream, heating through without boiling.

                For a silky texture, use an immersion blender to purée the soup until smooth (or transfer to a blender in batches).

                  Taste and adjust seasoning if needed, then stir in the remaining 2 tablespoons of butter for extra creaminess.
