2 cups cooked corned beef, diced

3 medium potatoes, peeled and diced

1 onion, finely chopped

1 red bell pepper, diced

2 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon black pepper

1/2 teaspoon salt (or to taste)

2 large eggs (optional, for poaching)

Fresh parsley, chopped (for garnish)

Prepare the Potatoes: In a large pot, boil the diced potatoes in salted water for about 10 minutes until just tender, then drain and set aside.

    Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and red bell pepper, sautéing until they are softened (about 5 minutes).
