4 medium potatoes, peeled and diced

2 cups kale, chopped (or substitute with cabbage)

1 cup green onions, sliced (whites and greens separated)

4 cups vegetable broth

1 cup heavy cream

2 tablespoons unsalted butter

1 teaspoon garlic powder

Salt and pepper to taste

Optional: crumbled bacon or vegetarian bacon for garnish

Instructions
 

In a large pot, melt the butter over medium heat. Add the white parts of the green onions and sauté for 2-3 minutes until softened.

    Add the diced potatoes and vegetable broth to the pot. Season with salt and pepper, then bring to a boil.

      Reduce the heat and let simmer for about 15-20 minutes, or until the potatoes are tender.

        Stir in the chopped kale and cook for an additional 5 minutes until wilted.

          Using an immersion blender, carefully blend the soup until smooth. Alternatively, transfer to a blender in batches and blend until creamy.

            Return the blended soup to the pot over low heat, and stir in the heavy cream and garlic powder. Adjust seasoning if necessary.

              Serve warm, garnished with the green parts of the green onions and optional crumbled bacon if desired.
