1 lb large shrimp, peeled and deveined

1 can (14 oz) coconut milk

2 tablespoons red curry paste

1 tablespoon fresh ginger, grated

3 cloves garlic, minced

1 medium onion, diced

1 red bell pepper, sliced

1 cup snap peas, trimmed

2 tablespoons fish sauce

1 tablespoon brown sugar

1 tablespoon lime juice

2 tablespoons vegetable oil

Fresh cilantro, for garnish

Cooked jasmine rice, for serving

Instructions
 

In a large skillet, heat the vegetable oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.

    Stir in the minced garlic and grated ginger, cooking for an additional minute until fragrant.

      Add the red curry paste to the skillet and stir well to combine with the onions, garlic, and ginger. Cook for about 2 minutes to deepen the flavor.

        Pour in the coconut milk and mix until the curry paste is fully dissolved. Bring the mixture to a simmer.

          Add the sliced red bell pepper and snap peas to the skillet. Let them cook in the coconut curry for about 5 minutes, until slightly tender.

            Gently add the shrimp to the curry and cook for another 3-5 minutes, or until the shrimp turns pink and opaque.

              Stir in the fish sauce, brown sugar, and lime juice, mixing well to incorporate all flavors. Allow to simmer for an additional 2 minutes.

                Taste and adjust seasoning as desired, adding more fish sauce for saltiness or lime juice for acidity.

                  Serve the coconut shrimp curry over jasmine rice, garnished with fresh cilantro for an aromatic finish.
