1 cup coconut milk

2 tablespoons fresh lime juice

Zest of 1 lime

3 cloves garlic, minced

1 tablespoon ginger, grated

1 tablespoon honey

1/2 teaspoon red pepper flakes (adjust to taste)

Salt and pepper to taste

2 tablespoons coconut oil (or olive oil)

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions
 

In a medium bowl, combine the coconut milk, lime juice, lime zest, minced garlic, grated ginger, honey, red pepper flakes, salt, and pepper. Mix well to create a marinade.

    Add the shrimp to the marinade, ensuring they are well coated. Cover and let marinate in the refrigerator for at least 20 minutes (or up to 1 hour for deeper flavor).

      In a large skillet or frying pan, heat the coconut oil over medium heat. Once hot, add the marinated shrimp (discard any remaining marinade).

        Cook the shrimp for 2-3 minutes on one side until they turn pink and slightly caramelized. Flip and cook for an additional 2-3 minutes until fully cooked and opaque.

          Remove from heat and garnish with fresh cilantro. Serve immediately with lime wedges on the side.
