Ingredients

1 cup coconut water

1/2 cup freshly squeezed lemon juice (about 3-4 lemons)

1/4 cup honey or agave syrup (adjust to taste)

1 cup water

1 tablespoon dried culinary lavender

Ice cubes

Lemon slices, for garnish

Fresh lavender sprigs, for garnish

Instructions

Infuse the Lavender: In a small saucepan, bring 1 cup of water to a boil. Remove from heat and add the dried culinary lavender. Let it steep for about 15-20 minutes. Strain the lavender infusion through a fine mesh sieve and discard the lavender flowers. Set the infused water aside to cool.

Mix the Base: In a large pitcher, combine the coconut water, freshly squeezed lemon juice, and honey (or agave syrup). Stir well until the honey is completely dissolved.

Combine: Once the lavender infusion has cooled, add it to the pitcher with the coconut and lemon mixture. Stir until all ingredients are well combined and taste for sweetness, adjusting if desired.

Chill: Refrigerate the mocktail for at least 30 minutes to allow the flavors to meld.

Serve: To serve, fill glasses with ice cubes, pour the coconut lavender lemonade over the ice, and garnish with lemon slices and fresh lavender sprigs.
