4 salmon fillets

1 can (13.5 oz) coconut milk

2 tablespoons red curry paste

1 tablespoon fresh ginger, grated

3 cloves garlic, minced

1 tablespoon lime juice

2 cups baby spinach

1 tablespoon olive oil

Salt and pepper to taste

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions
 

Preparation: Begin by patting the salmon fillets dry with paper towels. Season both sides with salt and pepper.

    Cook the Salmon: In a large skillet over medium-high heat, add olive oil. Once hot, carefully place the salmon fillets in the skillet, skin side down. Sear for about 4-5 minutes until the skin is crispy. Flip the salmon and cook for another 3-4 minutes until it is just cooked through. Transfer the salmon to a plate and set aside.

      Make the Curry Sauce: In the same skillet, reduce the heat to medium. Add the minced garlic and grated ginger, stirring for about 30 seconds until fragrant. Then add the red curry paste, stirring constantly for another minute.

        Add Coconut Milk: Pour in the coconut milk and lime juice, stirring well to combine. Bring the mixture to a gentle simmer. Let it simmer for about 2-3 minutes to thicken slightly.

          Incorporate Spinach: Add the baby spinach to the skillet, stirring until it wilts and reduces in size.

            Return Salmon to Skillet: Carefully place the cooked salmon back into the skillet, spooning some of the coconut curry sauce over the top. Allow it to heat through for about 1-2 minutes.

              Serve: Garnish with fresh cilantro and serve with lime wedges on the side for an extra zing.
