1 can (13.5 oz) coconut milk

2 tablespoons red curry paste

2 tablespoons fresh lime juice

2 tablespoons soy sauce or tamari

3 cloves garlic, minced

2 tablespoons unsalted butter

1 tablespoon olive oil

1 teaspoon fresh ginger, grated

Salt and pepper to taste

Fresh cilantro leaves for garnish

Lime wedges for serving

Cooked jasmine rice or quinoa for serving

Prepare Ingredients: Before you start, gather all ingredients and prepare the salmon fillets by patting them dry with a paper towel. Season with salt and pepper on both sides.
