2 sirloin steaks (about 1 inch thick)

Salt and freshly cracked black pepper, to taste

2 tablespoons olive oil

3 tablespoons unsalted butter, divided

1 shallot, finely chopped

1 tablespoon Dijon mustard

1 tablespoon Worcestershire sauce

1 teaspoon soy sauce

½ cup beef broth

2 tablespoons heavy cream

Chopped fresh parsley, for garnish

Prepare the Steaks: Season both sides of the sirloin steaks generously with salt and pepper. Allow them to sit at room temperature for about 15-20 minutes before cooking.

    Sear the Steaks: In a large skillet over medium-high heat, add the olive oil. Once hot, place the steaks in the skillet and cook for about 4 minutes on each side for medium-rare, or until desired doneness. Remove the steaks from the skillet and let them rest on a plate, covered with aluminum foil to keep warm.

      Make the Sauce: In the same skillet, reduce the heat to medium and add 2 tablespoons of the butter. Once melted, add the chopped shallot and sauté for 2-3 minutes until translucent.
