Ingredients

1 large round loaf of Italian bread (about 10 inches in diameter)

1/2 cup green olive tapenade

1/4 cup roasted red peppers, sliced

1/4 cup artichoke hearts, chopped

8 ounces sliced mortadella

8 ounces sliced salami

8 ounces sliced provolone cheese

4 ounces sliced ham

1 cup arugula (or fresh spinach)

2 tablespoons olive oil

1 tablespoon red wine vinegar (or balsamic vinegar)

Salt and pepper to taste

Instructions

Slice the Bread: Carefully cut the Italian bread in half horizontally, ensuring both halves remain intact. Hollow out some of the bread from the inside if it’s too thick.

Prepare the Olive Spread: In a bowl, mix the green olive tapenade, roasted red peppers, and chopped artichoke hearts. Add salt and pepper to taste. This will be your flavorful spread.

Layer the Meats and Cheese: On the bottom half of the bread, spread a generous layer of the olive tapenade mixture. Follow with slices of mortadella, salami, provolone cheese, and ham.

Add Fresh Greens: Layer the arugula or spinach over the meats and cheese, adding a touch of freshness and texture.

Top with Additional Spread: Spread another layer of the olive tapenade mixture on the inside of the top half of the bread.

Close and Press: Carefully place the top half of the loaf onto the stacked ingredients. Press down gently to help the sandwich hold together.

Wrap and Refrigerate: Wrap the entire sandwich tightly in plastic wrap. Place a heavy cast-iron skillet or a plate with some weights on top to press the sandwich down. This will help meld the flavors together. Refrigerate for at least 1 hour, or preferably overnight.

Serve: When ready to serve, unwrap the sandwich and slice it into wedges. Drizzle with a little olive oil and red wine vinegar just before serving for added flavor.
