2 pounds Yukon Gold potatoes, peeled and diced

1 cup mayonnaise

2 tablespoons Dijon mustard

1 tablespoon apple cider vinegar

3 hard-boiled eggs, chopped

1 cup celery, finely chopped

1 cup green onions, sliced

1/2 cup pickles, diced (or sweet relish)

Salt and pepper to taste

Paprika for garnish

Instructions
 

Begin by placing the diced Yukon Gold potatoes into a large pot. Cover them with cold water and add a pinch of salt to the water.

    Bring the pot to a boil over medium-high heat, then reduce to a simmer. Cook the potatoes for about 10-15 minutes until they are fork-tender but not falling apart.

      Drain the cooked potatoes and spread them out on a baking sheet to cool completely.

        In a large mixing bowl, whisk together the mayonnaise, Dijon mustard, and apple cider vinegar until smooth and well combined.

          Once the potatoes are cool, add them to the bowl with the dressing mixture. Gently fold them in to avoid breaking them up too much.

            Add the chopped hard-boiled eggs, chopped celery, sliced green onions, and diced pickles to the potato mixture. Combine gently until all ingredients are evenly coated.

              Season the salad with salt and pepper to taste, mixing again lightly.

                Cover the bowl with plastic wrap and refrigerate for at least 1-2 hours to allow the flavors to meld together.

                  Before serving, sprinkle paprika over the top for an added burst of color and flavor.
