1 lb ground beef

1 medium onion, diced

2 cloves garlic, minced

2 medium carrots, diced

1 celery stalk, diced

1 can (14.5 oz) diced tomatoes

4 cups beef broth

1 cup elbow macaroni

1 tablespoon tomato paste

1 teaspoon dried oregano

1 teaspoon Worcestershire sauce

Salt and pepper to taste

Fresh parsley or basil, for garnish (optional)

Instructions
 

In a large pot or Dutch oven, heat a tablespoon of oil over medium heat. Add the diced onion, garlic, carrots, and celery. Sauté for about 5 minutes until the vegetables are softened.

    Increase the heat to medium-high and add the ground beef. Cook until the beef is browned and cooked through, breaking it apart with a wooden spoon as it cooks (about 6-7 minutes). Drain excess fat if necessary.

      Stir in the diced tomatoes (with juices), beef broth, tomato paste, dried oregano, and Worcestershire sauce. Bring to a boil, then reduce heat to let it simmer for about 15 minutes.

        Add the elbow macaroni to the soup and cook for an additional 10 minutes, or until the macaroni is tender. Stir occasionally to prevent sticking.

          Season with salt and pepper to taste. If desired, garnish with fresh parsley or basil before serving.
