1 lb beef sirloin, thinly sliced

2 tablespoons olive oil

1 medium onion, finely chopped

2 cloves garlic, minced

8 oz mushrooms, sliced (cremini or button)

1 tablespoon all-purpose flour

1 cup beef broth

1 tablespoon Worcestershire sauce

1 cup sour cream

Salt and pepper to taste

1 teaspoon Dijon mustard (optional)

12 oz egg noodles, cooked according to package instructions

Fresh parsley, chopped (for garnish)

In a large skillet, heat the olive oil over medium-high heat. Add the sliced beef sirloin and sear until browned on all sides. Remove the beef from the skillet and set aside.

    In the same skillet, add the chopped onion and cook until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

      Add the sliced mushrooms to the skillet and sauté until they are tender and browned, around 5-6 minutes.

        Sprinkle the flour over the mushroom mixture and stir well to combine, cooking for about 1 minute to remove the raw flour taste.

          Gradually pour in the beef broth while constantly stirring to avoid lumps. Add the Worcestershire sauce and bring the mixture to a gentle simmer.

            Reduce the heat to low and return the cooked beef to the skillet. Stir in the sour cream and Dijon mustard (if using). Mix until everything is well coated and heated through, about 3-5 minutes. Season with salt and pepper to taste.

              Serve the beef stroganoff over a bed of egg noodles, garnished with fresh chopped parsley.
