4 pork sausages (or your choice of vegan sausages)

1 lb (450g) Russet potatoes, peeled and cubed

¼ cup milk (or dairy-free milk alternative)

2 tablespoons unsalted butter (or vegan butter)

Salt and pepper, to taste

1 tablespoon olive oil

1 small onion, finely chopped

2 tablespoons all-purpose flour

2 cups beef or vegetable stock

1 teaspoon Dijon mustard

Fresh parsley, chopped, for garnish

Instructions
 

Cook the Sausages:

    - In a skillet over medium heat, add the olive oil. Once hot, add the sausages and cook for about 10-12 minutes, turning occasionally, until they are golden brown and cooked through. Remove from pan and set aside.

      Prepare the Mashed Potatoes:
