- Cinnamon Sugar Churros

Ingredients
  

1 cup all-purpose flour

1 cup water

2 tablespoons granulated sugar

1/2 teaspoon salt

2 tablespoons unsalted butter

2 large eggs

1 teaspoon vanilla extract

Vegetable oil for frying

1/2 cup granulated sugar (for coating)

1 tablespoon ground cinnamon

Instructions
 

In a medium saucepan, combine water, 2 tablespoons of sugar, salt, and butter. Bring to a boil over medium heat until the butter is completely melted.

    Remove the saucepan from heat and stir in the flour until a dough forms. Let it cool for a few minutes.

      Once cooled, add the eggs one at a time to the dough, mixing well after each addition. Stir in the vanilla extract until smooth.

        Heat vegetable oil in a deep fryer or heavy-bottomed pot over medium-high heat to 375°F (190°C).

          Transfer the dough to a piping bag fitted with a star tip. Carefully pipe the dough into long strips (about 4-6 inches) directly into the hot oil.

            Fry the churros until they are golden brown on all sides, approximately 2-3 minutes. Use a slotted spoon to transfer them to a paper towel-lined plate to drain excess oil.

              In a shallow bowl, mix together the 1/2 cup of sugar and ground cinnamon. Roll the warm churros in this mixture until well-coated.

                Serve immediately while warm, with a side of chocolate sauce or dulce de leche for dipping!
