3 ripe bananas, mashed

1/3 cup melted coconut oil

1/2 cup brown sugar

1 large egg, beaten

1 teaspoon vanilla extract

1 teaspoon baking soda

1/4 teaspoon salt

1 cup all-purpose flour

1/2 cup cocoa powder

1 tablespoon instant espresso powder

1/2 cup chocolate chips (semi-sweet or dark)

1/4 cup chopped walnuts (optional)

Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan or line it with parchment paper.

    In a mixing bowl, combine the mashed bananas with the melted coconut oil and mix until fully integrated.

      Stir in the brown sugar, beaten egg, and vanilla extract until well combined.

        In a separate bowl, mix together the baking soda, salt, all-purpose flour, cocoa powder, and instant espresso powder.

          Gradually add the dry ingredients to the banana mixture, stirring until just combined. Be careful not to over-mix; some lumps are okay.
