1 ½ cups graham cracker crumbs

¼ cup granulated sugar

½ cup unsalted butter, melted

16 oz cream cheese, softened

¾ cup powdered sugar

1 teaspoon vanilla extract

2 cups heavy whipping cream

1 cup strawberries, hulled and sliced

8 oz dark chocolate, chopped

1 tablespoon coconut oil (or vegetable oil)

Prepare the Crust: In a medium bowl, mix the graham cracker crumbs, granulated sugar, and melted butter until combined. Press the mixture into the bottom of a 9-inch springform pan evenly to form the crust. Chill in the refrigerator while preparing the filling.

    Make the Cheese Filling: In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add powdered sugar and vanilla extract, mixing until combined and creamy.

      Whip the Cream: In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.

        Layer the Strawberries: Distribute the sliced strawberries over the chilled crust. Pour the cheesecake filling over the strawberries, smoothing the top with a spatula. Chill the cheesecake in the refrigerator for at least 4 hours or until set (overnight is best).

          Prepare the Chocolate Ganache: In a microwave-safe bowl, combine the chopped dark chocolate and coconut oil. Heat in the microwave in 30-second increments, stirring in between, until fully melted and smooth.
