8 ounces cream cheese, softened

1/4 cup powdered sugar

1 teaspoon vanilla extract

1 cup semi-sweet chocolate chips

2 tablespoons coconut oil (optional for smoothness)

Prepare the Cheesecake Filling: In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Use a hand mixer or spatula to blend until smooth and creamy.

    Fill the Strawberries: Using a small piping bag or a zip-top bag with a corner snipped off, gently fill each strawberry with the cheesecake mixture. Fill them generously but be careful not to overfill.

      Melt the Chocolate: In a microwave-safe bowl, combine the semi-sweet chocolate chips and coconut oil (if using). Microwave in 30-second intervals, stirring between each, until melted and smooth.
