Ingredients

For the Churro Dough:

1 cup water

1/2 cup unsalted butter

1 cup all-purpose flour

1/4 teaspoon salt

1 teaspoon cinnamon

3 large eggs

For the Chocolate Filling:

1/2 cup semisweet chocolate chips

1/4 cup heavy cream

1 tablespoon powdered sugar

For Coating:

1/4 cup granulated sugar

1 teaspoon cinnamon

For Drizzling:

1/4 cup melted chocolate (for garnish)

Instructions

Prepare the Churro Dough: In a medium saucepan, combine water and butter over medium heat. Once it comes to a boil, add flour, salt, and cinnamon. Stir until the mixture forms a ball and pulls away from the sides of the pan. Remove from heat.

Add Eggs: Allow the dough to cool for about 5 minutes. Then, add eggs one at a time, mixing well after each addition until completely incorporated. The dough should be smooth and thick.

Pipe the Churros: Transfer the dough to a piping bag fitted with a star tip. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper. Pipe small circles (about 3 inches wide) onto the baking sheet, leaving space between each.

Bake: Bake the churro circles for 20-25 minutes or until golden brown. Remove from the oven and let them cool slightly.

Prepare the Chocolate Filling: In a small saucepan, heat heavy cream until just simmering. Remove from heat and add chocolate chips. Stir until smooth and glossy. Add powdered sugar and mix until well combined.

Assemble the Pies: Carefully cut each churro circle in half, creating two halves. Spoon a generous amount of chocolate filling onto one half, then top with the other half to create a pie.

Coat the Churro Pies: In a shallow bowl, mix granulated sugar and cinnamon. Roll each churro pie in the mixture to coat well.

Drizzle Chocolate: Melt additional chocolate and use a fork to drizzle over the churro pies for a decorative touch.

Prep Time: 30 minutes | Total Time: 1 hour | Servings: 8 pies

                    - Presentation Tips: Place the chocolate churro pies on a rustic platter and sprinkle some extra cinnamon sugar around for visual appeal. Serve with a side of chocolate dipping sauce for an extra indulgent treat!
