1 lb boneless, skinless chicken thighs

2 tablespoons chipotle sauce (adjust for spice level)

1 teaspoon cumin

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 tablespoon olive oil

8 small corn tortillas

1 cup shredded cabbage

½ cup diced tomatoes

½ cup diced red onion

½ cup fresh cilantro, chopped

1 avocado, sliced

Lime wedges for serving

Instructions
 

Start by marinating the chicken thighs. In a large bowl, combine the chipotle sauce, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper.

    Add the chicken thighs to the bowl and ensure they are well coated with the marinade. Cover and refrigerate for at least 30 minutes (or up to 2 hours for deeper flavor).

      In a large skillet, heat the olive oil over medium-high heat. Once hot, add the marinated chicken thighs. Sear each side for about 5-7 minutes or until fully cooked and slightly charred.

        Remove the chicken from the skillet and let it rest for a few minutes before slicing it into bite-sized pieces.

          In the same skillet, warm the corn tortillas for about 30 seconds on each side until soft and pliable.

            To assemble the tacos, layer the cabbage, sliced chipotle chicken, diced tomatoes, diced red onion, and avocado on each tortilla.

              Top with fresh cilantro and squeeze lime juice over the tacos for an added zesty flavor.

                Serve immediately with extra lime wedges on the side.
