Ingredients

8 oz cream cheese, softened

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 can (15 oz) chili with beans (no beans if preferred)

1/2 cup diced tomatoes (preferably with green chilies)

1/4 cup chopped green onions

1 teaspoon garlic powder

1 teaspoon cumin

1/4 teaspoon cayenne pepper (optional for extra heat)

Salt and pepper to taste

Tortilla chips for serving

Instructions

In a medium saucepan, over low heat, melt the softened cream cheese, stirring continuously until smooth.

Gradually add the shredded cheddar and Monterey Jack cheeses to the saucepan, mixing well until fully melted and creamy.

Stir in the can of chili (with or without beans, based on preference) and the diced tomatoes with green chilies.

Season with garlic powder, cumin, cayenne pepper (if using), salt, and pepper. Mix thoroughly to combine all flavors.

Increase the heat slightly to medium, allowing the dip to simmer for about 5 minutes, stirring frequently until the dip is bubbly and heated through.

Remove from heat and stir in the chopped green onions, reserving a few for garnish.

Transfer the queso dip into a serving bowl, and garnish with the remaining green onions for a pop of color.

Serve immediately with tortilla chips for dipping.
