2 tablespoons olive oil

1 medium onion, diced

2 carrots, sliced

3 garlic cloves, minced

1 pound chicken breasts, diced

4 cups chicken broth

2 large potatoes, peeled and cubed

1 cup frozen peas

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion and sliced carrots and sauté until the onion is translucent, about 5 minutes.

    Stir in the minced garlic and cook for an additional minute until fragrant.

      Add the diced chicken breasts to the pot and season with salt, pepper, paprika, and thyme. Cook the chicken until it’s no longer pink, about 5-7 minutes.

        Pour in the chicken broth and bring the mixture to a boil.

          Once boiling, lower the heat and add the cubed potatoes. Simmer for 20 minutes or until the potatoes are tender.

            Stir in the frozen peas and simmer for another 5 minutes until heated through.

              Taste and adjust the seasoning, adding more salt and pepper if needed.

                Ladle the soup into bowls and garnish with fresh parsley.
