Ingredients
  

1 lb chicken breast, diced

2 tablespoons vegetable oil

1 medium onion, chopped

3 cloves garlic, minced

1 medium carrot, sliced

1 cup celery, sliced

2 cups cabbage, shredded

4 cups chicken broth

1 cup evaporated milk

1 cup elbow macaroni

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon paprika

1 bay leaf

2 green onions, chopped for garnish

Instructions
 

In a large pot, heat the vegetable oil over medium heat. Add the diced chicken and cook until browned, about 5-7 minutes. Remove the chicken and set aside.

    In the same pot, add the chopped onion and garlic. Sauté until the onion becomes translucent.

      Add the sliced carrot and celery, cooking for another 3-4 minutes until slightly tender.

        Return the cooked chicken to the pot, then pour in the chicken broth, and add the bay leaf, salt, pepper, and paprika. Bring to a boil.

          Once boiling, add the elbow macaroni and reduce the heat to a simmer. Cook for about 10 minutes or until the pasta is al dente.

            Stir in the shredded cabbage and evaporated milk, then allow the sopas to simmer for an additional 5 minutes until the cabbage is wilted and flavors combine.

              Remove the bay leaf and adjust seasoning if necessary.

                Serve hot, garnished with chopped green onions on top.
