2 boneless chicken breasts, thinly sliced

2 packs of instant ramen noodles (discard the seasoning packets)

1 cup bell peppers (red, yellow, and green), sliced

1 cup snap peas, trimmed

1 cup carrots, julienned

2 cloves garlic, minced

1 thumb-sized piece of ginger, grated

3 tablespoons soy sauce

2 tablespoons sesame oil

1 tablespoon honey

1 tablespoon rice vinegar

1 teaspoon crushed red pepper flakes (adjust to taste)

3 green onions, sliced

1 tablespoon sesame seeds (for garnish)

Cook the Ramen: In a pot of boiling water, cook the ramen noodles according to package instructions for about 3-4 minutes, or until just tender. Drain and set aside.

    Prepare the Chicken: Heat 1 tablespoon of sesame oil in a large skillet or wok over medium-high heat. Add the sliced chicken and stir-fry for about 5-6 minutes until golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Sauté the Vegetables: In the same skillet, add another tablespoon of sesame oil. Add minced garlic, grated ginger, and all the sliced vegetables (bell peppers, snap peas, and carrots). Stir-fry for about 3-4 minutes until they are slightly tender but still crisp.

        Combine Ingredients: Return the cooked chicken to the skillet with the vegetables. Add the cooked ramen noodles to the pan along with soy sauce, honey, rice vinegar, and crushed red pepper flakes. Gently toss everything together until the noodles and chicken are evenly coated with the sauce and heated through.

          Garnish and Serve: Remove from heat and stir through the sliced green onions. Serve hot, garnished with sesame seeds for an added crunch.
