2 cups cooked chicken, shredded

1 cup frozen peas and carrots

1 cup diced potatoes (parboiled)

1/2 cup diced onion

2 cloves garlic, minced

1 cup chicken broth

1 cup heavy cream

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

1 cup biscuit mix

2/3 cup milk

1 cup shredded cheddar cheese

Fresh parsley for garnish

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large skillet over medium heat, sauté the diced onion and minced garlic until translucent, about 3-4 minutes.

      Add the shredded chicken, frozen peas, carrots, and parboiled potatoes to the skillet, stirring to combine.

        Pour in the chicken broth and heavy cream, then stir in the dried thyme, dried rosemary, salt, and pepper. Simmer for about 5 minutes until the mixture is slightly thickened.

          Transfer the chicken mixture to a greased 9x13 inch casserole dish.

            In a bowl, combine the biscuit mix and milk until just combined (do not overmix). Drop spoonfuls of the biscuit batter over the chicken filling, covering the surface.

              Sprinkle the shredded cheddar cheese over the top of the biscuit batter.

                Bake in the preheated oven for 30-35 minutes, or until the biscuits are golden brown and cooked through.

                  Let it cool for 5-10 minutes before serving. Garnish with fresh parsley before serving.
