Ingredients

2 cups cooked chicken, shredded

1 cup mozzarella cheese, shredded

1/2 cup grated Parmesan cheese

1/2 cup ricotta cheese

1 teaspoon garlic powder

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

1 package (1 lb) of puff pastry sheets, thawed

1 egg, beaten (for egg wash)

1/2 cup marinara sauce (for dipping)

Fresh basil leaves, for garnish

Instructions

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

In a large mixing bowl, combine the shredded cooked chicken, mozzarella cheese, Parmesan cheese, ricotta cheese, garlic powder, dried oregano, salt, and black pepper. Mix until well combined.

On a lightly floured surface, roll out the puff pastry sheets to smooth out any creases. Cut each sheet into 4 equal squares.

Place a generous tablespoon of the chicken mixture in the center of each pastry square.

Fold the corners of the pastry over the filling to create a pillow shape and pinch the edges to seal tightly.

Brush the tops of the pillows with the beaten egg to give them a golden finish when baking.

Place the filled pastries on the prepared baking sheet and bake for 20-25 minutes or until they are puffed and golden brown.

While the pillows are baking, heat the marinara sauce in a small saucepan over medium heat.

Once baked, remove the pillows from the oven and let them cool for a couple of minutes before serving. Garnish with fresh basil leaves.

Serve warm with marinara sauce on the side for dipping.
