1 tablespoon olive oil

1 onion, diced

2 garlic cloves, minced

2 carrots, diced

2 celery stalks, diced

1 teaspoon dried thyme

6 cups chicken broth

1 cup cooked shredded chicken (rotisserie works great)

1 cup long-grain rice (or any preferred rice)

Zest of 1 lemon

Juice of 2 lemons

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Optional: Sliced lemon wheels for garnish

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion, garlic, carrots, and celery. Sauté until the vegetables are softened, about 5-7 minutes.

    Stir in the dried thyme and cook for another minute until fragrant.

      Pour in the chicken broth and bring to a boil. Once boiling, add the rice and cooked chicken. Reduce the heat to a simmer and cook for about 15-20 minutes, or until the rice is tender.

        Once the rice is cooked, stir in the lemon zest and lemon juice. Taste and adjust seasoning with salt and pepper.

          Allow the soup to simmer for another 5 minutes to let the flavors meld together.

            Serve hot, garnished with chopped parsley and optional lemon wheels for an extra burst of flavor.
