1 pound boneless, skinless chicken breast, cut into bite-sized pieces

4 ounces ham, thinly sliced

4 ounces Swiss cheese, sliced

1 cup breadcrumbs (panko preferred for extra crunch)

1/2 cup all-purpose flour

2 large eggs, beaten

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

Vegetable oil for frying

Prepare the Chicken: In a mixing bowl, season the chicken pieces with garlic powder, onion powder, smoked paprika, salt, and pepper. Mix well to ensure even seasoning.

    Assemble the Bites: Lay a slice of ham and a slice of Swiss cheese on top of each piece of chicken. Carefully roll them up, tucking in the sides to ensure the filling doesn’t escape. Secure each roll with a toothpick if necessary.

      Coat the Bites: Set up a breading station with three shallow dishes: one with flour seasoned with a pinch of salt, one with beaten eggs, and one with breadcrumbs. Dip each chicken roll first in the flour, then the egg, and finally coat it in breadcrumbs, pressing gently to ensure they stick.

        Fry the Bites: In a large skillet, heat about 1/2 inch of vegetable oil over medium heat. Once hot, carefully add chicken bites in batches, avoiding overcrowding. Fry them for about 3-4 minutes on each side or until golden brown and cooked through. Use a slotted spoon to remove them and place them on a plate lined with paper towels to drain any excess oil.

          Serve: Remove the toothpicks from the bites before serving. If desired, you can serve them with a dipping sauce such as honey mustard or a chipotle mayo for an extra kick.
