Ingredients

2 cups cooked chicken, shredded

1 cup frozen mixed vegetables (peas, carrots, corn)

1 can (10.5 oz) cream of chicken soup

1/2 cup chicken broth

1 cup milk

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried thyme

Salt and pepper to taste

1 ½ cups biscuit mix

1/2 cup shredded cheddar cheese

Fresh parsley, chopped (for garnish)

Instructions

Preheat your oven to 375°F (190°C).

In a large mixing bowl, combine the shredded chicken, frozen mixed vegetables, cream of chicken soup, chicken broth, milk, garlic powder, onion powder, thyme, salt, and pepper. Stir until well mixed.

Pour the chicken mixture into a greased 9x13 inch casserole dish, spreading it evenly across the bottom.

In another bowl, prepare the biscuit mix according to the package instructions (this usually involves adding water or milk), mixing until just combined.

Using a spoon or cookie scoop, drop spoonfuls of the biscuit batter over the chicken filling, leaving some gaps for steam to escape.

Sprinkle shredded cheddar cheese over the top of the dumplings.

Bake in the preheated oven for 30-35 minutes, or until the dumplings are golden brown and cooked through.

Remove the casserole from the oven and let it cool for 5 minutes before serving.
