2 cups fresh or frozen corn kernels

1 lb boneless, skinless chicken breasts, cubed

4 strips of bacon, chopped

1 medium onion, finely diced

3 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1 tablespoon olive oil

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley, chopped for garnish

Instructions
 

In a large skillet, heat the olive oil over medium-high heat. Add the chopped bacon and cook until it becomes crispy. Once done, remove the bacon from the skillet and let it drain on paper towels, keeping the rendered fat in the skillet.

    In the same skillet, add the diced onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and cook for another minute until fragrant.

      Add the cubed chicken to the skillet, seasoning with salt, pepper, and smoked paprika. Cook the chicken until browned and cooked through, about 5-7 minutes.

        Once the chicken is cooked, stir in the corn kernels and cook for an additional 2-3 minutes, allowing the corn to warm through.

          Pour in the chicken broth and bring the mixture to a gentle simmer.

            Reduce the heat to low and stir in the heavy cream. Cook for another 5 minutes, letting the sauce thicken slightly.

              Add the crispy bacon back into the skillet, stirring to combine. Taste and adjust seasoning if necessary.

                Remove from heat and garnish with fresh parsley before serving.
