1 cup cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 cup cherry pie filling

8 egg roll wrappers

1 egg, beaten (for sealing)

Oil for frying (vegetable or canola)

Whipped cream, for serving (optional)

Fresh cherries, for garnish (optional)

Instructions
 

In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Beat until smooth and creamy.

    Take an egg roll wrapper and place it on a clean surface with a corner pointing towards you.

      Spoon about 2 tablespoons of the cream cheese mixture onto the bottom half of the wrapper, followed by a spoonful of cherry pie filling.

        Fold the bottom corner over the filling, then fold in the sides tightly. Roll it up towards the top corner, sealing the wrapper with a little beaten egg on the edge.

          Repeat the process with the remaining wrappers and filling.

            In a deep pan or fryer, heat oil to 350°F (175°C). Carefully add the egg rolls in batches and fry until golden brown and crispy, about 3-4 minutes on each side.

              Once cooked, place the fried egg rolls on paper towels to drain excess oil.

                Allow them to cool slightly before serving. Optionally, dust with additional powdered sugar for extra sweetness.

                  Serve warm with whipped cream and garnish with fresh cherries on the side for a vibrant look.
