Instructions
In a medium mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
Gradually add the powdered sugar and continue to mix until fully combined and no lumps remain.
Stir in the vanilla extract and sour cream, mixing until the mixture is smooth and well incorporated.
Gently fold in the whipped cream until combined, creating a light and fluffy texture.
Spoon the cherry pie filling into the mixture and gently swirl it in, making sure to retain some visible ribbons of cherry.
Transfer the dip to a serving bowl, smoothing the top with a spatula.
Sprinkle a light layer of graham cracker crumbs over the top and garnish with fresh mint leaves.
