1 pound walleye fillets, skinless and boneless

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1/2 cup all-purpose flour

1 large egg

1 cup breadcrumbs (preferably panko)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper to taste

1/4 cup fresh parsley, chopped (for garnish)

Prepare the Fish: Cut the walleye fillets into bite-sized nuggets, approximately 1 to 2 inches in size. Pat them dry with paper towels.

    Make the Cheese Mixture: In a bowl, mix together the shredded mozzarella cheese and grated Parmesan cheese. Set aside.

      Set Up Breading Stations: In three separate bowls, place the flour seasoned with salt, pepper, garlic powder, onion powder, and paprika in one; the beaten egg in another; and the breadcrumbs in the third.
