2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 cup unsalted butter, cold and cubed

1 cup shredded sharp cheddar cheese

1 cup cooked breakfast sausage, crumbled

3/4 cup buttermilk (or substitute with milk mixed with 1 tablespoon lemon juice)

1 tablespoon fresh chives, chopped (optional, for garnish)

Instructions
 

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

    In a large mixing bowl, whisk together flour, baking powder, baking soda, garlic powder, onion powder, salt, and black pepper until thoroughly combined.

      Add in the cold, cubed butter. Using a pastry cutter or your fingers, mix until the mixture resembles coarse crumbs with some pea-sized pieces of butter remaining.

        Stir in the shredded cheddar cheese and crumbled sausage until evenly distributed throughout the flour mixture.

          Pour in the buttermilk gradually, gently stirring just until the dough comes together. Avoid overmixing.

            Turn the dough out onto a floured surface and pat it into a 1-inch thick rectangle. Fold the dough over itself in thirds (like a letter) and gently roll it out again. Repeat this step once more for flakiness.

              Using a round biscuit cutter, cut the dough into rounds and place them onto the prepared baking sheet. Gather any scraps and re-roll to cut more biscuits.

                Bake in the preheated oven for 15-18 minutes or until the tops are golden brown.

                  Remove from the oven and allow to cool slightly. Garnish with freshly chopped chives if desired.
