1 cup of mozzarella cheese, shredded

1/2 cup of grated Parmesan cheese

1/2 cup of all-purpose flour

1/4 cup of cornstarch

2 large eggs, beaten

1 cup of breadcrumbs (preferably panko for extra crunch)

1 teaspoon of garlic powder

1 teaspoon of Italian seasoning

Salt and pepper to taste

Olive oil spray for baking

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    In a mixing bowl, combine the shredded mozzarella and grated Parmesan, mixing well until evenly combined.

      In a separate bowl, whisk together the flour, cornstarch, garlic powder, Italian seasoning, salt, and pepper.

        In another bowl, beat the two eggs until smooth and set aside.

          Using your hands, take small amounts of the cheese mixture and form them into bite-sized balls (about 1-1.5 inches in diameter).

            Roll each cheese ball first in the flour mixture, then dip it into the beaten eggs, and finally coat it with breadcrumbs. Ensure they are fully covered in breadcrumbs for a crispy finish.

              Place the coated bites on the prepared baking sheet and lightly spray them with olive oil to help them crisp up while baking.

                Bake in the preheated oven for 15-20 minutes, or until golden brown and puffy.
