4 cups all-purpose flour

1 ½ cups warm water (about 110°F)

2 teaspoons active dry yeast

2 teaspoons sugar

2 teaspoons salt

3 tablespoons olive oil (plus extra for drizzling)

1 large onion, thinly sliced

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

Fresh rosemary leaves (optional, for garnish)

Flaky sea salt (for sprinkling)

Instructions
 

In a small bowl, combine the warm water, sugar, and active dry yeast. Allow it to sit for about 5-10 minutes until frothy.

    In a large mixing bowl, combine the flour and salt. Make a well in the center and add the yeast mixture and 3 tablespoons of olive oil.

      Stir until a sticky dough forms. Knead on a floured surface for about 5-7 minutes until the dough is smooth and elastic.

        Place the dough in a lightly oiled bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

          Meanwhile, in a skillet, heat a tablespoon of olive oil over medium heat. Add the sliced onions and sauté until they are golden brown and caramelized, about 15 minutes. Set aside to cool slightly.

            Once the dough has risen, punch it down and transfer it to a greased baking sheet or a large cast-iron skillet. Spread the dough out into an even layer, gently stretching it to fill the pan.

              Use your fingers to press dimples into the surface of the dough. Drizzle a bit of olive oil over the top and sprinkle with flaky sea salt.

                Distribute the caramelized onions evenly over the dough and sprinkle with both mozzarella and Parmesan cheese.

                  If desired, scatter some fresh rosemary leaves over the top for added flavor.

                    Preheat your oven to 425°F (220°C). Cover the focaccia with a cloth and let it rise for another 20-30 minutes.

                      Bake in the preheated oven for 20-25 minutes, or until golden brown and the cheese is bubbly.

                        Remove from the oven and let it cool slightly before slicing into squares or rectangles.
