2 cups mashed potatoes (prepared from 4 medium potatoes)

1 cup shredded cheddar cheese

1/2 cup grated parmesan cheese

2 large eggs

1/4 cup milk

3 tablespoons unsalted butter, melted

1/4 cup green onions, finely chopped

Salt and pepper to taste

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Optional: 1/4 cup cooked bacon bits (for extra flavor)

Instructions
 

Preheat your oven to 375°F (190°C) and lightly grease a muffin tin or line it with muffin liners.

    In a large bowl, combine the mashed potatoes, cheddar cheese, parmesan cheese, melted butter, green onions, garlic powder, onion powder, salt, and pepper. Stir until all the ingredients are well mixed.

      In a separate bowl, whisk together the eggs and milk until blended. Slowly add the egg mixture to the potato mixture, stirring until fully incorporated. If using bacon bits, fold them in at this stage.

        Scoop the potato mixture into the prepared muffin tin, filling each cup about 3/4 full.

          Bake in the preheated oven for 20-25 minutes, or until the tops are golden brown and the muffins are cooked through. A toothpick inserted into the center should come out clean.

            Once done, remove from the oven and let the muffins cool in the pan for about 5 minutes before transferring to a wire rack to cool completely.
