8 slices of garlic bread (store-bought or homemade)

1 pound medium shrimp, peeled and deveined

1 cup shredded mozzarella cheese

1/2 cup shredded cheddar cheese

4 tablespoons unsalted butter, softened

4 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Garlic Butter: In a small bowl, mix the softened butter with minced garlic, Italian seasoning, salt, and pepper to create a garlic butter spread.

    Sauté the Shrimp: In a skillet over medium heat, add a tablespoon of the garlic butter. Once melted, add the shrimp and cook for 2-3 minutes on each side until pink and opaque. Remove from heat and set aside.

      Assemble the Sandwich: Take two slices of garlic bread and spread a layer of the garlic butter on one side of each slice. On the non-buttered side of one slice, layer half of the mozzarella and cheddar cheeses, followed by the cooked shrimp, and then top with the remaining cheese.

        Top with Bread: Place the second slice of garlic bread on top, buttered side facing out, to form the grilled cheese sandwich.

          Grill It Up: Heat a skillet over medium-low heat. Carefully place the sandwich in the skillet and grill for about 3-4 minutes on each side, or until the bread is golden brown and the cheese is melty and gooey.

            Serve: Once grilled to perfection, remove from the skillet and let it cool for a minute. Cut the sandwich in half and sprinkle with chopped parsley for garnish. Serve immediately.
