1 lb ground beef

1 cup shredded cheddar cheese

1 cup cream cheese, softened

1/2 cup green bell pepper, finely diced

1/2 cup onion, finely diced

2 cloves garlic, minced

1 teaspoon cumin

1 teaspoon paprika

Salt and pepper, to taste

6 large tortillas

1 cup salsa (for serving)

Fresh cilantro, for garnish

Instructions
 

In a large skillet over medium heat, brown the ground beef until fully cooked, about 5-7 minutes. Drain any excess fat.

    Add the minced garlic, diced onion, and green bell pepper to the skillet. Cook until the onion is translucent, about 3-4 minutes.

      Sprinkle in the cumin, paprika, salt, and pepper, stirring to combine. Remove the skillet from heat and let the mixture cool slightly.

        In a separate bowl, mix the softened cream cheese and half of the shredded cheddar until well blended.

          Lay out a tortilla on a flat surface. Spread a generous layer of the cream cheese mixture over the tortilla, leaving a small border around the edges.

            Spoon a portion of the beef mixture onto the center of the tortilla. Top with a little additional shredded cheddar cheese.

              Carefully roll up the tortilla tightly, tucking in the sides as you go to form a secure roll-up. Repeat this process for the remaining tortillas.

                Preheat your oven to 375°F (190°C). Place the roll-ups seam side down on a baking sheet lined with parchment paper.

                  Bake for 15-20 minutes until the tortillas are golden and crispy and the cheese has melted.

                    Remove from the oven and let cool for a few minutes before slicing into pinwheels or serving whole.
