Cheesecake Stuffed Strawberries

1 pound large strawberries

8 ounces cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

1/4 cup sour cream

1/4 cup crushed graham crackers

Zest of 1 lemon

Fresh mint leaves for garnish (optional)

Instructions
 

Begin by washing the strawberries gently under cold water. Pat them dry with a paper towel.

    Cut the tops off the strawberries and hollow out the insides using a small paring knife or a melon baller, being careful not to puncture the sides. Set the hollowed strawberries aside.

      In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Mix with a hand mixer until smooth and creamy.

        Add the sour cream and lemon zest to the cream cheese mixture and continue mixing until everything is well combined and fluffy.

          Take a piping bag (or a plastic ziplock bag with a corner snipped off) and fill it with the cheesecake filling.

            Pipe the cheesecake filling into each hollowed strawberry until they're generously stuffed.

              Once all strawberries are filled, sprinkle the crushed graham crackers over the tops of the cheesecake filling for a delightful crunch.

                Place the stuffed strawberries on a serving platter and optionally garnish them with fresh mint leaves for a pop of color and freshness.
