Ingredients

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

2 tablespoons sugar

4 (8-ounce) packages cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

4 large eggs

1 cup sour cream

½ cup strawberry puree (fresh or frozen strawberries blended)

Fresh strawberries, for garnish

Instructions

Preheat the Oven: Preheat your oven to 325°F (160°C).

Make the Crust: In a medium bowl, combine the graham cracker crumbs, melted butter, and 2 tablespoons of sugar. Mix until the crumbs are evenly coated. Press this mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove and let cool while you prepare the filling.

Prepare the Filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy. Gradually add in 1 cup of granulated sugar and continue to beat until well combined.

Add Vanilla and Eggs: Add the vanilla extract and mix well. Then, add the eggs one at a time, mixing on low speed after each addition just until incorporated. Be careful not to overmix.

Incorporate Sour Cream and Strawberry Puree: Gently fold in the sour cream and strawberry puree until the mixture is smooth.

Pour and Bake: Pour the cheesecake filling into the cooled crust, spreading it evenly. Bake in the preheated oven for 1 hour, or until the edges are set but the center still has a slight jiggle.

Cool and Chill: Once baked, turn off the oven and crack the oven door. Let the cheesecake cool in the oven for about 1 hour. Then, refrigerate for at least 4 hours, preferably overnight, to fully set.

Serve: Once set, carefully remove the sides of the springform pan. Slice the cheesecake and garnish each serving with fresh strawberries on top.
