Ingredients

12 large strawberries, fresh and ripe

4 oz cream cheese, softened

2 tablespoons powdered sugar

1 teaspoon vanilla extract

1/2 cup whipped cream (fresh or store-bought)

1/4 cup crushed graham crackers

Fresh mint leaves for garnish

Instructions

Prepare the Strawberries:

    - Rinse the strawberries under cold water and pat them dry.

      - Cut off the tops and carefully hollow out the centers using a small teaspoon or a melon baller, leaving enough berry at the base to hold shape.

        Make the Cheesecake Mixture:

          - In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract.

            - Beat with a hand mixer or whisk until the mixture is smooth and creamy.

              Incorporate Whipped Cream:

                - Gently fold the whipped cream into the cheesecake mixture until well combined. This adds lightness to the filling.

                  Fill the Strawberries:

                    - Using a piping bag or a small spoon, fill each hollowed-out strawberry with the cheesecake mixture, heaping it generously.

                      Garnish:

                        - Sprinkle the tops with crushed graham crackers for that classic cheesecake crunch.

                          - Optionally, add a small mint leaf on top of each filled strawberry for a pop of color.

                            Chill and Serve:

                              - Place the filled strawberries in the refrigerator for at least 30 minutes to allow them to set slightly.

                                - Serve chilled as a fun and unique dessert!
