1 lb ground beef (80/20)

1/2 lb ground pork

1 cup breadcrumbs

1/2 cup shredded cheddar cheese, plus extra for topping

1/4 cup grated Parmesan cheese

1/2 cup onion, finely chopped

2 cloves garlic, minced

1/4 cup milk

1 large egg

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper to taste

1/4 cup ketchup (for topping)

Instructions
 

Preheat your oven to 350°F (175°C) and lightly grease a mini muffin tin or a baking dish.

    In a large mixing bowl, combine the ground beef and ground pork until well incorporated.

      Add the breadcrumbs, shredded cheddar cheese, grated Parmesan cheese, chopped onion, minced garlic, milk, egg, Worcestershire sauce, thyme, smoked paprika, salt, and pepper. Mix until everything is evenly combined.

        Take a small amount of the meat mixture (about 2 tablespoons) and flatten it in your hand. Insert a teaspoon of the extra shredded cheddar cheese in the center.

          Fold the meat mixture around the cheese to enclose it, then shape it into a ball or oval. Repeat the process until all the mixture is used.

            Place each meatloaf morsel into the prepared muffin tin or baking dish.

              Drizzle ketchup over the tops of each meatloaf morsel, then sprinkle with additional shredded cheddar on top.

                Bake in the preheated oven for 20-25 minutes, or until the internal temperature reaches 160°F (70°C) and the morsels are cooked through.

                  Remove from the oven and let them cool for a few minutes before serving.
